They look boring, but looks can be deceiving. Especially in the case of these cookies. Turns out Chocolate Peanut Butter Chip Cookies are anything but boring. They were amazing. Ridiculously easy, and absolutely delicious. When I saw these on A Bird in the Kitchen I knew that they needed to be part of my cooking baking craze on Sunday night. I’m not sure I can sum it up better than SweetBird does: “Put away your bathroom scale. Break out the fat pants with the elastic waistband. These cookies are going to rock your world”. Rock your world they will.
These cookies are not for the nibblers out there. They aren’t for the “Okayyy, but only just ONE” type. I’m going to put this out there: you won’t be able to eat just one bite, or just one cookie, prepare to make a meal out of them. They’re just too good for self control. I’ll go so far as to quote my favorite Brit brit in her new single “Three”: “Living in sin is the new thing”. So go ahead, make them and eat a meal of Chocolate PB Chip Cookies, you won’t regret it. [especially if you put the bathroom scale away as SweetBird suggested].

Chocolate Peanut Butter Chip Cookies
1 cup sugar
1/2 cup brown sugar
1 cup shortening
2 eggs
2 teaspoons vanilla
1/4 cup Hershey’s chocolate syrup
1/2 cup unsweetened cocoa powder
1 cup all purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
1 bag (12.5 oz) Reese’s peanut butter baking chips
Preheat oven to 375F
Beat together sugars, shortening, eggs, vanilla, chocolate syrup, and cocoa powder. Add in flours, baking soda, and salt. Mix until combined completely. Stir in the peanut butter chips. Using two teaspoons or a cookie scoop drop about two tablespoonfuls of batter on the cookie sheet – 12 to a sheet. Bake one sheet of cookies 8-9 minutes, two sheets 10 minutes. Cookies will NOT appear finished when you pull them out, but don’t overcook. Remove from the oven and let cool on the sheet for an additional 5 minutes. Then transfer the cookies to cool completely on brown paper or paper towels – do NOT cool on a rack, they’ll harden.
Makes 48 cookies.

Just to quote SweetBird again “May God have mercy on our thighs”.
Enjoy!
Bon Eating,
Whitney
