Cake Batter Rice Krispies

Hello from Hurricane Sandy aftermath in NYC — or rather, from Brooklyn.

Our apartment weathered the storm pretty well except for losing power, so all in all I would consider us pretty lucky. Much of NYC and the surrounding areas weren’t so lucky. Please, if you can, consider donating to the Red Cross to help out victims of the hurricane. It has really shaken this area much worse than any of us could have imagined. Like me, many of my downtown friends are posted up at another friends apartment with power + cell service. Who can blame us? To get you through the long hours sans work and anything else to do besides stream something on Netflix: Cake Batter Rice Krispies. You don’t even need power to make these! Just a gas stove and access to a bodega that still has boxed cake mix.

Cake Batter Rice Krispies

Ingredients
  • 3 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • ⅓ cup funfetti or rainbow chip cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions
  1. Melt butter in a large saucepan over low heat and add marshmallows.
  2. Stir until they begin to melt, adding in (dry) cake mix one spoonful at a time so its combined.
  3. Stir in cereal so it is completely coated with marshmallow mixture.
  4. Sprinkle in half of the sprinkles and mix.
  5. Press into a baking dish (I used 13 x 9 but any size will do) and top with remaining sprinkles.
  6. Let sit for about 30 minutes before cutting.

These are so easy! Try them out and let me know how you like them. Any cake mix will do so feel free to get creative!
